There's absolutely no reason why a bus driver needs to carry a fruit knife around. If they need to slice it prior to eating, then prep it before leaving the house, like anybody else does. 

If I wanted steak for dinner, I wouldn't see it as justification to take a meat cleaver onto a bus.
