The RAF are normally pretty open about breaking the sound barrier with their jets.
So not sure why they would deny it in this case.
Enemy jets wouldn't get that far inland - they would be picked up miles out to sea by rapid response jets and identified prior to then.
You have several air traffic control centres in North Yorkshire (military and civilian) as well as the likes of Fylingdales and the American place outside Harrogate, so if it was an airborne noise around Catterick, it would have been identified.
The MOD have said that HMS Tyne escorted a handful of Russian ships out of British waters over the weekend though.
